TUSCAN COOKING COURSES

Caterina sets up these courses with the active participation of Nina who interprets. The lessons take place, by request, in Caterina’s home in the Chianti countryside or in agriturisms, tourist facilities, hotels, and private houses and are for a minimum of 3 people.
The programme is flexible and can be suited to your own preferences – just send in a request by email. The lessons can be worked around a single theme such as “Cooking with chili peppers”, “Vegetables from the garden”, “Arlecchino and Pulcinella – tastings of Florentine and Neopolitan cooking”. Or, in a single lesson we can prepare several dishes for a complete dinner; “Menu for an occasion - from starter to dessert, “Menu for an occasion – Tuscan treats and specialities”.
According to the season we can offer special lessons for learning all the secrets in the preparation of homemade syrups, liqueurs and cordials such as “Limoncello Margherita”, “Grandmother’s four citrus fruits” or very particular conserves made from onions, chilli peppers or the incredible “Explosiva”.
The courses can be worked out in a single session of about four hours or in three or more lessons.
The main feature of these courses lies in the very careful choice of ingredients with a particular regard for freshness, using local seasonal produce. The hands-on sessions in the kitchen are preceded by a brief introduction where we explain some of the curiosities, history, iconography, and traditions which lie behind the way the ingredients are used in Tuscan cooking. We also give you some basic information on the cultivation and methods of production of some of our most typical local products such as extra-virgin olive oil and the DOC and DOCG wines of the Chianti Classico area.
When Caterina thought up these courses, who did she have in mind?

All those people – men and women – who are keen to know more about the special features of our local cuisine, from the recipes to the close relationship with the territory.
The tourists who wants to visit and see their holiday location with “different eyes”.
Italian and foreign associations or private groups who want to join us in a project for the appreciation of regional territories with their traditions and tastes.
